I kicked off "A Series of Beer Pairings" with Madison's. I heard Madison's was releasing a new menu so I was intrigued to indulge in their new fare. I chose a recent addition to the menu called the Lollipop Lamb Chops. They arrived in four pops meeting in the middle, stacked on a bed of brussels sprouts with bacon and drizzled with smoked paprika sauce. In keeping with the first rule of beer pairing I tried to pair the intensity of the meal with the intensity of the beer. I chose New Belgium's new Hoppy Bock. The beer had a golden to copper color and was topped with an egg shell white head of foam. My first bite of succulent lamb was topped with smoky, creamy paprika sauce that the floral hop flavor easily complimented. The earthy flavors of the brussels sprouts yearned for the refreshing clean finish of this lager which cleansed the pallet, leaving me wanting more.
