I was advised by owner, Bonnie Arent, to try the Torchon off of the small plate menu. Goose Island Sofie & Torchon Torchon is a bombolini (doughnut) sitting on a fig port jam topped with guaniciale (Italian Bacon) and succulent foie gras. It's a complex dish boasting an array of flavors that Goose Island Sofie stands up to quite nicely. As a Belgian Saison, Sofie is fermented with wild yeast and aged in Chardonnay wine barrels with orange peel. Sofie is a lightly tart, dry and well carbonated farmhouse ale. The effervescence cuts straight through the rich characters on the plate and makes the sweet fig port jam shine. However, I cannot overlook the most intense flavors of this dish. The warm bombolini's sweet dough resonates nicely with the subtle sweetness from the orange peel in the beer. As well, the heavenly rich yet smooth foie gras calls out for those wild yeast and delightful Chardonnay flavors of Sofie. This pairing was so delectable, I am eager to dine here again!
