Chef's Corner Hazelnut Café Photo by Shanna Wolf Start simple, bring quality ingredients to the table, and create a community-centered café—that was Matt Heindl's plan with Hazelnut Café, his modest coffee shop set amid Blue Mounds' rolling green hills. While Heindl's mainstays have been quality coffee and pastries, including experimental flavors like Szechuan pepper cinnamon rolls with ginger frosting, the café's biggest draw has become his woodfired pizzas. Scratch-made, Heindl's pizzas come in a number of tempting tastes, like Bianca—made of fresh mozzarella, crushed garlic, sea salt and grape seed oil— and get baked in a 760-degree oven he built himself. The café is a great pit-stop between Madison and summer hotspots such as Governor Dodge and Blue Mounds State Parks. With Heindl chatting up customers and no posted closing time, you may find yourself lingering a while. "If there's people coming in, a good time being had… I don't see a reason to close," says Heindl.
