potatoes? Chef Leah Caplan of Field
to Fork Consulting comes to the
rescue with an inventive idea for
spinning a whole new meal.
Golden Potato Pancakes
Since Hanukkah and Thanksgiving
overlap this year, make extra
potatoes to ensure you have some
leftovers for latkes. They're extra
tasty with Greek yogurt. Serves 4.
2 eggs, beaten
2 c. leftover mashed potatoes
⅔ c. flour
2 tsp. baking powder
1 tsp. sea salt
½ tsp. each turmeric and cumin seeds
Pinch cayenne and black pepper
1-2 Tbsp. milk
3 Tbsp. vegetable oil
Mix together beaten eggs
and potatoes. Stir together dry
ingredients, then combine with
potato and egg mixture. Add milk
and stir well (should be very thick).
