It is dried, used as a spice and seasoning and is served with nearly every meal we eat. This month my pairing celebrates the flavor of peppercorn. The pairing begins with a 6oz. grilled sirloin from Johnny Delmonico's. It's served piping hot, with melted herb-scallion butter and freshly cracked peppercorn from the waitress. The sirloin is perfectly matched with Goose Island's Pepe Nero. This dark farmhouse saison is brewed with peppercorn and resonates nicely with the charred exterior of the steak. Furthermore, the peppercorn flavors in the beer enhance each bite allowing the tenderness and juicy center to shine. If you're looking for a delicious side to pair with this meal I'd choose the grilled asparagus. The seared flavors on the vegetable will only extend the flavor matrimony that you're already enjoying.
