Renaissance Yeast Launches Maestoso Maestoso, the latest addition to the Vancou- ver, B.C.-based Renaissance Yeast Inc. family of hydrogen sulfide-preventing wine yeasts, is a natural Rhone-style yeast that is ideal for high- sugar reds and late-harvest grapes. Developed using traditional classical wine yeast breeding techniques, Maestoso is alcohol-tolerant to 17% and is an excellent fermenter with relatively high nutrient requirements. Ergonum Cask is Now Available in the U.S. The Ergonum upright cask/fou- dre from Vicard Generation 7 is now available in the U.S. The cask sits at an incline with a flat bottom, allowing lees to collect toward the front rather than the middle. The drains and bung hole have also been moved to the front, which eliminates the need to crawl beneath the tank for pumping and cleaning or unsafe reaching across the tank when filling.
