Describing how the RAIN method differs from traditional brewing techniques, Vastardis said, "All other brewing methods rely on a combination of time, turbulence, and temperature. We realized that by using negative pressure as a brewing variable, we were able to control the extraction process with unmatched accuracy, purity of extrac- tion—being able to extract very delicate but also very complex flavor elements, and to do it very quickly," he continued, explaining another benefit of this innovative brew system: "With the self-cleaning brew chamber, we're able to move between coffee and teas, between delicate senchas and the most complex, fruit-forward, essence-infused herbal teas." Zojirushi is also looking to capture new commercial customers with its newest hot water dispenser. Marilyn Matsuba, marketing manager for Zojirushi, said, "Tea consumption is growing so much that there's a lot of coffee shops that want to get into tea." Zojirushi's entrée into the commercial market is a modification of one of its most popular at-home hot water dispensers. The new five liter water heater requires no plumbing. It can warm water to a steep-ready temperature without reaching a boil first. For example, it takes less than half the time to get to 195°F in quick temp mode. The CD-LTC50 also has a time delay feature that lets a coffee or tea house operator shut it off for as long as 6.5 hours, then turn on so that by the time the shop opens the water is already ready. Matsuba said, "A very high volume tea shop will not use this product. They will have a large commercial unit that would be plumbed directly for water. This is more for smaller capacity uses like if they want to do quick demos." Though little about water quality and temperature or steep times has change in the 21st century, tea brewing equipment manufacturers are finding ways to improve exist- ing product lines. Innovative brewers like the BKON Craft Brewer and the Steampunk are only the beginning of a new wave of fundamental change in conveniently delivering the exquisite flavors of tea to appreciative consumer's palates.
