CHECKING OUT A CHILEAN PISCO Chilean pisco is produced under a much different set of regulations vs. the Peruvian spirit. The featured grape varietals in Chilean pisco are muscat, pedre jimenez and torontel. Distillation can and does take place in column stills, and producers in Chile are allowed to add water to bring the pisco down to bottle strength. Aging in oak is also allowed, so many Chilean piscos will develop fl avor and color from this maturation. One example of Chilean pisco is Kappa (42.5% ABV), made from pink mus- cat and Alexandria muscat grapes sourced from the Elqui Valley. The nose is very aromatic, fl oral notes of orange blossom and rose petals, lemon citrus and green apple. The palate calls to mind fresh grape juice, leading to ripe tree fruits—peach and apricot, honeydew melon and pineapple. The fi nish is long and lingering with very nice acidity. —TAG
