Perched in her chair, she rolls one chocolate truffl e after another through bowls of cashews, coconut or crushed toffee toppings before sitting back to admire her work. "A lot of people think that when you cook for a living, that's the last thing you want to do when you come home," explains the dessert chef and baking in- structor. "But that's not the case with me. Baking is still my passion." A lifelong lover of cooking, the 58-year-old mother of three decided to offi cially make baking a career 25 years ago and has been a staple of kitchens and classrooms around Madison ever since. Following her sweet tooth, she specializ- es in all things sugary, and has whipped up baked goods at notable restaurants through the years such as L'Etoile, Nadia's and now, Bunky's Cafe. All the while she's juggled teaching gigs in the culinary department at Madison College and for more casual chefs at home stores including Monroe Street's Orange Tree Imports and Stoughton's All Th rough the House. At the top of her list of favorite classes to teach? Th e ever-irresistible world of truffl es. "Th e truffl e classes are always popular, because people think making them is really complicated," Feest explains. "But it's the simplest thing to do and they always leave those classes in awe, saying 'I can't believe I just made these.'" Along with a newfound confi dence, she admits she might be sending cooks out the door with a few guilty habits. "I like to joke I got into this business 50 pounds ago," she says with a laugh.
