30 STiR coffee and tea | 2024 Issue 5 (October / November) While both production lines recognize the importance of proper processing, only a few high-end exporters with enough resources are likely to invest in innovative technologies that guarantee the coffee's unique characteristics, ensuring it stands out in a competitive global market. The Cultural Significance of Women Sorting Coffee in Colombia In the early 20th century, urban women in Colombia began playing a key role in coffee sorting, driven by cultural changes and economic necessity. As coffee production grew, particularly in regions like Antioquia and Caldas, women took on the critical task of manually sorting coffee beans to ensure quality before export. This period marked a shift in the coffee industry, where women became integral to maintaining the high standards that have since defined Colombian coffee. Their meticulous work in selecting top-quality beans helped solidify Colombia's reputation for excellence in international markets. Sorting involves inspecting beans and discarding defective ones, a task that demands skill and experience since bean quality directly impacts the flavor and value of the coffee. Women often work in groups, fostering a collaborative environment where they share techniques and knowledge to ensure the best practices in sorting. Specialty coffee mills emphasize precision, quality control, and attention to detail in every step of the process, distinguishing them from commercial mills. Specialty mills often use more refined equipment to eliminate impurities with greater precision. 1 Hand Sorting Hand sorting plays a crucial role in specialty coffee mills. Workers meticulously examine each batch of beans, removing any defective or discolored beans that the machines may miss, ensuring only the finest beans make the cut. 6 Polishing Polishing is more common in specialty processing. The beans are polished to remove the silverskin, ensuring a cleaner and more attractive appearance, essential for specialty-grade coffee presentation. 3 Cupping & Quality Testing Expert tasters or Q-graders cup samples from each batch multiple times to ensure the coffee meets the specific flavor profile and quality expected in specialty coffee. 8 Hulling The outer parchment layer is removed, exposing the green coffee bean. The equipment is usually calibrated based on the varietal, process, and physical characteristics of each lot. To preserve quality, they typically use smaller, precise hulling machines and processes to minimize damage to the beans and avoid cross-contamination between batches. 2 Moisture Control Specialty coffee requires strict moisture control. The beans are often monitored closely to ensure moisture levels are within a specific range (typically 10-12%), essential for preserving the beans' integrity and flavor profile. 7 Grading and Sorting Beans are meticulously graded and sorted by size and density in size graders and gravity separators. This step is critical in specialty mills, as consistency in size and weight contributes to uniform roasting and directly impacts flavor development. 4 Standard Preparation Beans are prepared according to buyer or specialty coffee standards, ensuring that size, defect rate, moisture content, and flavor profile meet the expecta- tions of the specialty market 9 Optical Sorting High-precision optical sorters detect color defects. These machines are often more advanced than those in commercial mills and more accurately select only the highest-quality beans. 5 Packaging The processed green coffee is packaged with exceptional care, often using vacuum-sealed or nitrogen-flushed bags to preserve freshness and protect the beans from environmental factors. Packaging is designed to maintain flavor integrity and prevent contamination. 10 Specialty Coffee Mills Processing Techniques
