"From the beginning, we've wanted the shop to be more than just someone's secondary oce, library, or study hall," Bell explains. "We wanted to oer a fun, social atmosphere that would have more resemblance to a traditional pub." Mavelous, a San Francisco coee and wine bar, is another cafe that opened on the premise of serving both coee and alcohol. Located in a historic pre-San Francisco Earthquake building that was constructed in 1900, the unique space was an optimal choice for owner Phillip Ma to build his vision of a cafe. e ambience inside Mavelous is extremely unique and is designed with a coee bar on one side and a wine bar on the other, lending itself well to diverse clientele. While coee sales make up about 70 percent of total sales, Ma says coee and alcohol used to be split 50-50 until recently, when more businesses have been opening in the neighborhood, bringing with them an inux of professionals who stop in during the work day. e Mavelous wine menu rotates as oen as each week. At any given time, there is generally a sparkling wine, a rose, four to six reds, four whites, and three dessert wines to choose from. Pricing is between $10-15 per glass. e cafe also oers a selection of 16-20 micro-cra beers (bottles only), ranging in price from $5 to $70 (for an exclusive 750 mL Belgian brew). Customers can also enjoy pastries, cheese plates, and crostinis with their beverages. Beer and wine are available for purchase throughout the day. With more beverage oerings come more challenges. One of the dilemmas Kudu's faced is the large overhead cost of operating a successful business in a prime area of the city. Kudu's features a large courtyard area ideal for drawing in patrons who want to stop and stay for a while. Bell explains that because coee shops are traditionally a small ticket business, the addition of beer selections to the menu has increased sales volume overall, especially in the aernoon and evening hours of operation. Kudu's has also limited some of the traditional services many customers have come to expect from other coeehouses, such as free Wi-Fi access. e results have been surprisingly successful. Sta education is another concern for retailers. e coee industry requires an extensive breadth of knowledge. It's essential that employees are able to talk to customers about beer and wine with the same ease they talk about coee. Ma says the trick to eective sta education is to hire good people and also have realistic expectations. "Our menu isn't so outrageous that it's overwhelming to sta," Ma explains. "I also have a wine director who organizes tastings and discussions with sta about new wines. And the good thing about my baristas is that they love beer!
