KEY RESTAURANT OF THE MONTH Saz’s celebrates 35th year in Miller Valley, at stadiums, festivals & Performing Arts Center IN 1976, STEVE SAZAMA opened Saz’s State House in an unlikely location next to railroad tracks in the Miller Valley. Sazama, who believes in “focusing on what you do best,” turned the restaurant at 5539 W. State St. into one of Milwaukee’s most popular sports bars and restaurants. Located just west of the Miller Tour Center and just north of the home of the Milwaukee Brewers, Saz’s is frequented by players as well as fans, who come to talk and enjoy their barbecued ribs, chive fries and other specialties. Thirty-five years later trains still pass the twice- enlarged Saz’s State House, but Saz and his crew have taken their award-winning ribs, sauces and cooking techniques on the road: • In 1985 Saz’s began serving its specialty products at Summerfest and the Wisconsin State Fair, evolv- ing into Saz’s Festivals. Now the number one ven- dor at both Summerfest and the State Fair, Saz’s 46 Festivals also serves more than 18 other major fes- tivals such as Bastille Days, Festa Italiana, Zoo a la Carte and Lake Country Art Fair. • In 1990, Saz’s began serving its BBQ ribs and sandwiches at tailgate parties and other events. Starting with a few employees, a truck and a grill, Saz’s Catering became the largest off-premise catering company in Wisconsin, serving more than 1,500 corporate and social events annually, from formal gatherings of 20 to companywide events of 20,000. • In 1993, to satisfy the needs of backyard barbe- cuers, Saz’s began offering its most popular menu items and sauces in major grocery stories around the state. Today, many stores offer Saz’s Signature BBQ Baby Back Ribs; Original, Vidalia Onion and Sassy BBQ Sauces; BBQ shredded pork and shred- ded chicken; Mozzarella Sticks and Chive Fries. • In 2009, Saz’s Catering became the exclusive food and beverage provider at the Lambeau Field
