58 BRAVA MAGAZINE | AUGUST 2014 GO+DO SAVOR PHOTOS BY SHANNA WOLF (BELOW) AND KRISTIN JOINER (ABOVE) MAIZE CRAZE THE DISH WINE Ceviche with Peruvian Corn: Inka Heritage Raw sea bass is cured in lime juice, yellow chili pepper, garlic and ginger, giving it a delicate flavor that balances acid, heat and sweet. The sizable starter is garnished with sweet potatoes, onion and Peruvian or Cuzco corn, a kernel with a nuttier taste and substantial texture, similar to hominy. 602 S. Park St., Madison. inkaheritagerestaurant.com. Korean Corn Tea: New Soul Korean Despite its name, Korean corn tea, or oksoosoo cha, isn't really a tea at all. It's a tisane, or infusion made by steeping corn kernels in hot water. Kernels are roasted first, resulting in an intensely nutty and sweet beverage with scattered kernels in the bottom of the cup. 2503 University Ave., Madison. (608) 238-3331. Cornbread: New Orleans Takeout Specialties like jambalaya and shrimp etouffée are served with a square of stellar cornbread at this takeout joint (where you can sit and stay, too). Rich in corn flavor with a texture that holds together, at 75 cents per piece it's a deliciously cheap eat. 1920 Fordem Ave. and 1517 Monroe St., Madison. eatmobettah.com. –Corey Dane, Madison's community director for Yelp.com SUMMER'S LAST SIPS This summer has kept my palate busy and happy with deliciously crisp, elegant white wines and bright, fresh, minerally rosés. As I count down to the season's end, I'm going to linger over these favorite summer wines: Pattes Loup Chablis 2012: Grapes from vines planted in 1951 are harvested by hand and the wine is aged in stainless steel eggs. Full of mineral notes and chalky stone, honeyed pear and almond cookie flavors, this wine is a treat that screams summer, salads, seafood and sunshine. $28. Commanderie de la Bargemone Provence Rose 2013: With delightful aromas of strawberries and red currants, this fresh, dry wine also has a touch of strawberry and melon flavors. It even looks like a summer sunset. Perfect for sipping on its own or with most any picnic food. $16. –Karen Eigenberger, partner, Steve's Wine-Beer-Spirits What's for Breakfast? Something delish, that's what. Short Stacks Eats, a charmed new breakfast joint, serves up from-scratch, local ingredients-packed breakfast eats all day in a big way. For starters, order up an inventive craft cocktail—especially the bloody mary, a don't miss meal-in-a-glass with more than 15 fresh-squeezed fruits and veggies, and spicy pickled green beans, beets, jalapenos and carrots as garnish. Breakfast sand- wiches and burritos have savory substance, while the Cajun biscuits and gravy boast salty and dense disks with rich meaty sauce and spice that lingers. But our favorites: giant milkshakes in Ball jars, the crusty herbed potatoes served alongside entrees, and of all the stacks, the fluffy, spiced sweet potato oatmeal pancakes with a rich dollop of maple bourbon mascarpone to ground them. 301 W. Johnson St., Madison. shortstackeats.com. GOOD EATS
