If it's a good brat you seek, a new eatery may be for you. Bison Jack's aims to not only make bison synonymous with juicy brats and burgers, but eco-friendly food choices, too. Serving bison is a trend in the restau- rant world and one Director of Operations Shawn Horne believes Madisonians will embrace. "Madison is an educated city and [one of] the top consumers of sausages and brats … so it's a great place for this con- cept," he explains. Gluten-free and leaner than many meats (bison is even less fatty per serving than chicken), Horne says Bison Jack's uses sus- tainable ranching practices.
