In this old-fashioned recipe, the mash was allowed "to sour" before yeast was added to start the fermentation process. After the sour mash was distilled, it was entered into barrels at two different entry proofs, 105 and 125, and aged for 13 years. $46.35 (750-ml.) www.buffalotracedistillery.com RUSSELL'S RESERVE SINGLE BARREL RYE Russell's Reserve has unveiled its Single Barrel Rye. It is not chilled-fi ltered, caramel in color, with a balance of spicy pepper, vanilla and caramel on the nose and palate, the company says. This whiskey was aged for six years in new American white oak barrels before spending another two years inside used port wine barrels. The vanilla charac- teristics of American white oak mingle with fruit notes of port, the company says. 1792 Port Finish Bourbon is bottled at 88.9 proof. $39.99 (750-ml.) www.1792bourbon.com RED DAWN RUSSIAN IMPERIAL STOUT Red Dawn is a new Russian Imperial Stout by Newport Storm Brewery in 2015. Dawn has an extreme roast profi le, the company says, with ample amounts of Canada Pale and Castle Special B Malt. Flaked barley and oats were also added for balance in this 9%-ABV beer. $9.99 (4-pack) www.newportstorm.com ANGRY ORCHARD'S STONE DRY Angry Orchard's new Stone Dry is an American interpretation of the traditional English dry cider style. It offers bright apple aroma, juicy fl avor, and a clean dry fi nish, the company says, a balance between the sweetness and acidity of culinary apples and the tannins of traditional cider-making apples. These include European bittersweet varieties like Dabinett, Binet Rouge and Harry Masters Jersey.
