The whis- key is "handmade from grain to bottle, produced entirely by the couple," the company says, as they don't have a regular staff. Swift Single Malt is twice-distilled from 100% Scottish malted barley, with cuts taken off of hand-ham- mered copper pot stills from Portugal to fi ne tune the spirit by taste. Modeled after a traditional Speyside Scotch, Swift Single Malt is made with water that is controlled (down to the molecular level) to match the composition of Scotland's water, the company says, and is never chill-fi ltered. Each batch is aged in Kentucky Bourbon barrels before fi nishing the product in Oloroso sherry casks. Each barrel and cask is coopered in house by Nick. $55 per 750-ml. bottle. www.swiftdistillery.com PASOTE TEQUILAS 3 Badge Beverage Corporation has intro- duced Pasote, a line of Mexican tequilas made from pure blue agave. The new Pa- sote tequilas will be sold in select markets throughout the U.S. by the company's spirits division, 3 Badge Mixology. Each is made from blue agave that is baked and then distilled with rainwater and natural spring water in copper pot stills. Pasote's master tequilero grows blue agave in the Jalisco Highlands in Mexico and uses traditional production techniques to make "pure and distinctly herbal" Pasote tequilas, the company says. Each Pasote glass bottle is made by a family of glass artisans and has slightly asymmetrical wave patterns visible in the glass. This year's limited-edition Woodford Reserve Kentucky Derby bottle features art- work from equine artist Thomas Allen Pauly. A neck tag provides details about the product and the artist. $43.99 per 1-L. bottle. www.woodfordreserve.com BLACK TRUMPET BLUEBERRY CORDIAL Black Trumpet Blueberry Cordial is the newest farm-to-bottle spirit in the collaborative Art in the Age Infusions series coming out of Tam- worth Distilling. Blueberries plucked from the Foss Mountain berry patch serve as the base. For the next element, distillers Matt Power and Jamie Oakes turned to the New Hampshire Mushroom Company. Together, they decided on the black trumpet mushroom, which is native to area forests. Taking from the distill- ery's own botanical gardens, a bit of lemon verbena and lavender add some fl oral and citrus notes. The fi nished product is a balanced cordial enjoyed on its own, over ice or suited best in a cocktail. 25% ABV. $25 per 375-ml. bottle. Website: www.tamworthdistilling.com CHAMPS DE PROVENCE ROSÉ Prestige Wine & Spirits Group has added this wine is from Côtes de Provence to its portfolio. It is a classic dry rosé, with notes of red berries, citrus and orange blossom with a medium-body, hints of raspberry and a zesty mineral fi nish. Champs de Provence pairs with imported cheeses, dishes prepared with intense spices, and can be enjoyed on its own. The fi nal blend is selected from small parcels within the regions of Trets, Peynier and Pourriéres, just south of the Mountain Sainte Victoire. The wines are aged on fi ne lees for several weeks before being blended. Champs de Provence is comprised of 40% Grenache, 30% Cinsault, 20% Syrah and 10% Carignan and Mourvedre. $17.99 – $19.99 per 750-ml. bottle. www.prestigewineandspiritsgroup.com FOREVER YOUNG WINE ROSÉ This wine comes from St. Tropez, France. It has hints of citrus zest with a fl avor of clementines, the compa- ny says. For the production process, the grapes are de-stemmed and then left for maceration, then put in stainless steel container for fermentation at controlled temperature, in which the whole process is checked and then matured in oak barrels.
