A tea syrup is also a good way to incorporate it, she says. "You also want to use lighter or white spirits so the color does not change too much." Butterfl y pea extract does affect the fl avor of drinks a bit, Marrero believes, "but every ingredient you add does." She likes the Wild Hibiscus brand, which includes Wild Hibiscus Blue-Tee 100% Pure Butterfl y Pea Flower Tea (about $5 for 20 teabags) and b'Lure blue extract made from butterfl y pea powder. PRETTY AND PINK Butterfl y pea powder's ability to change color depending on the drink's acidity makes for some unique sips. For instance, the Charleston, SC-based cocktail bar 492 offers the Disco Sour. The drink uses ice cubes tinged blue with butterfl y pea powder, which melt into pink, replicating pulsing dance fl oor lights. Gary Hayward, North American brand ambassador for Bombay Sapphire gin, has created several blue cocktails using butterfl y pea. One is the Collins Avenue, made with gin, sim- ple syrup, 10 drops of butterfl y pea extract stirred with ice and topped with soda. Bartenders should present the drink with a separate mini carafe of ¾ oz. chilled fresh lemon juice. Guests pour the lemon juice into the cocktail and watch it change from blue to pink. Summer 75 Punch (created by Lynnette Marrero, serves 10) 1 ½ cups Bombay Sapphire gin 1 cup Butterfl y pea fl ower tea brewed and chilled ¾ cup St. Germain elderfl ower liqueur ¾ cup Fresh lemon juice 3 cups Martini & Rossi prosecco Combine fi rst four ingredients in a punch bowl or pitcher and mix. Add prosecco. Freeze edible fl owers in ice and use to chill punch. The Collins Avenue cocktail changes from blue to pink when fresh lemon juice is added, because the butterfl y pea extract and soda in the drink react to the lower pH levels/higher acid.
