It also has the advantage of altitude, with vineyard elevations of up to 4,100 feet. With its near-desert conditions, humidity levels are low. Diurnal variation during the ripening season ranges from cool nights (60°F) to through the vineyards of France and California, few are better-suited to lead the way. Cox helped lay out the boundar- ies and define the characteristics of the High Plains AVA. Approved in 1993, it encompasses close to 9 million acres, with fewer than 4,000 devoted to vines. Of the 35 vineyards listed on the High Plains Wine Growers website, Cox was involved in advising or otherwise managing most of their startups. Grower Alan Bayer of Bayer Fam- ily Vineyards, who has an 8-acre vineyard, said: "Bobby had to tell us how to plant, and how to build a trellis. We'd never even seen a vineyard before." Despite its relatively late start, the region produces 70% of the state's grapes and is its second largest AVA (after Texas Hill Coun- try). According to the Texas Depart- ment of Agriculture, the High Plains AVA has the best microclimates hot days (95-plus). The dry climate is conducive to organic farming; it is too dry for most insect vectors, and there is relatively little Pierce's disease, which has ravaged other regions in Texas.
