EDITORIAL OFFICE 1030 W. Higgins Road, Suite 230 Park Ridge, IL 60068 • (847) 720-5600 Visit us online: www.specialty-coff ee.com E-mail: specialtycoffee@m2media360.com Hello from your new editor this dark, exotic establishment that served this weird but addictive stuff called “espresso,” off ered coff ee with spooned-on cream that was called “mit schlag,” and had little tables with chessboards painted on—and people were actually playing chess at them! It was my introduction to the nurturing, community atmosphere of a D good coff eehouse. Little did I know at the time that writing about this would eventually become my vocation. Hello from the new editor of Specialty Coff ee Retailer. Th is is an exciting fi eld, and I’m glad to have the chance to learn it and share information with the community of coff eehouse owners. I guess you could say that, as a Greek-American, coff eehouse culture is in my blood. In Greece, the kafeneion is a community nerve center, serving as not just a meeting place but oſt en, in small villages, as a sort of general store. Greeks carried this over to the New World, where coff eehouses were so central to the immigrant community that transient Greeks oſt en used their favorite coff eehouse as their mailing address. As I contemplate the world of coff eehouses, I’m really pumped, and not just from caff eine. Th is magazine’s readers are precisely the kind of small- business owners whom politicians tend to sentimentalize during elections as the backbone of American enterprise (and ignore the rest of the time). I’m in awe of the challenges faced by independent coff ee shop owners. How do you compete with Starbucks and Caribou and the other behemoths? How do you persuade consumers away from the increasingly sophisticated options for home coff ee brewing? How do you keep your off erings fresh and lively, while still maintaining the menu items that appeal to your core customers? My job, of course, will be to gather the answers to questions like those as best I can and share them. In this issue, for instance, you will fi nd features on in-store marketing and on using syrups to concoct appealing cold beverages— vital to those hot summer months when even the most dedicated caff eine hound might hesitate to order a steaming cup of java. But the information fl ow won’t be one way. I’m counting on continuing the lively dialogue that exists between this magazine and our readers. Th rough our LinkedIn page, our contacts with myself and the other writers, and just phone calls (847-720-5617) and e-mails (pan@m2media360.com), I’m looking forward to hearing what’s on your mind. Don’t be shy. I’d also like to salute our outgoing interim editor, Kathleen Furore. I’d had the pleasure of working with Kathy on previous occasions, and she has been most gracious and helpful in helping me make the transition. —Pan Demetrakakes, editor 4 | June 2011 • www.specialty-coffee.com uring my college days, there was a campus coff eehouse that served as a portal to adult life.
