"More than 90 percent of our operators selling cinnamon rolls for breakfast sell them at lunch, and 80 percent also sell them at dinner or for late-night snacks," Giandelone says. Your mother should know about another issue in the Mintel research: childhood obesity. Operators would do well to address the dearth of nutritionally sound kids' meals during the breakfast hours. Rich's Duszynski agrees that including baked goods with whole wheat is the easiest way to address the consumer seeking better-for- you options. "While they can't convert all of their offerings, they need to offer customers options—for example, a low-fat muffin," Duszynski says. "Almost every bakery item has a whole-grain option. And with the use of white wheat, the whole-grain benefits are delivered without the dark color and bitter taste of whole wheat. The adult consumer wants to see the features of the healthy choices identified." ROUND 'BAR' To fill the need for nutritious choices, Rich developed the Ultimate Breakfast Round, a 100 percent whole-grain round granola bar with 6 grams of fiber and 5 grams of protein. It comes in orange-cranberry and blueberry flavors. "Blueberry is the overriding fruit preference for muffins," Duszynksi notes. Pumpkin is popular during holiday season. "The best part is that it tastes great and both kids and adults love them," he says. "It's a great grab-and-go breakfast item that operators can fresh-bake and easily promote with hot drinks. Since it makes a great snack item and can be out for a long period of time, this product can be sold all day." Breakfast cookies are available from Blue Moon Bakery, Hillsboro, Ore.
