Conclusions MAP inhibited ripening at high carbon dioxide and high oxygen levels but lead to internal browning when the MAP packaging material or elevated temperatures resulted in high carbon dioxide with low oxygen condi- tions. LifeSpan MAP bags designed for pears appear to be suitable for Bartlett pears stored at 30°F for up to four months, or storage for three months and a transportation period of up to three weeks at 30° to 40°F during the early season, and at 30° to 35°F during the late packing season. These conditions yielded fruit of high eating quality without internal browning or advanced ripening. Identifying safe concentrations of oxygen and carbon dioxide for commodities is critical for the successful com- mercial application of MAP. In this study, optimal carbon dioxide and oxygen concentrations for MAP differed from generally accepted ranges for CA storage, which are 1% to 2% oxygen and 0% to 0.5% carbon dioxide. This project demonstrated that the susceptibility of Bartlett pears to carbon dioxide injury is highly depend- ent on the oxygen concentration and storage duration. The MAP packaging developed an atmosphere of around 5.5% carbon dioxide with a relatively high oxygen con- centration and appears to be an excellent addition to low- temperature management for extending the storage life and potential transportation distances for Bartlett pears.
