Beside pink-frosted cupcakes, cookies and lemonade, kids enjoyed rustic fun, like hopping in the saddle for 25-cent pony rides and seeing how they measured up. An easy and kid-friendly menu of lil' smokies, cowgirl caviar, cakes, short stacks of cookies and lemonade perfectly complemented the Western theme and kept the party focused on fun. Yee-haw! COWGIRL CAVIAR 14 oz. can black beans, rinsed 14 oz. can black eyed peas 3 c. corn kernels 1 c. green onions, chopped 1 c. cilantro, chopped 2 cloves garlic, minced 1 pint cherry tomatoes, halved 1 jalapeno, diced (optional) Salt and pepper to taste Juice of 1 lime, more to taste Combine all ingredients in a large bowl and toss. Can be made ahead. Serve with tortilla or corn chips. Serves 6 to 8.
