Chuck Hayward, wine educator and Southern Hemisphere wine specialist for J.J. Buckley Wines in Oakland, Calif., said the customer resistance angle on screwcaps isn't valid. "With the customers we've been dealing with, and this is going way back, maybe 10 years, it's a non-issue," he said. "Initially (American wineries) were very reluctant to get into screwcaps, but things changed rap- idly. I think it's a winery problem. I think it's fairly accepted that screw- caps are better. We've talked about reduction or aging, but it doesn't take a lot of research to realize that screwcaps work fine, (wines) just mature a bit more slowly and keep the purity of fruit a little bit longer over time." Some awfully good research into the reliability of screwcaps has been done right here in the USA. Trials conducted by Constellation using highly accurate oxygen sensors has given us new insight into the relative oxygen ingress allowed by various seals, from natural cork to synthetic corks to Stelvin closures with either tin or Saranex liners. HOGUE RESEARCH Winemaker Co Dinn at Wash- ington state's Hogue Cellars has done extensive trials, and the com- pany made its 2011 study results publicly available through the web- site www.twistopenhogue.com. They're results every winemaker should read. The recent study involved maturation of some of Hogue's oak-matured reserve red wines and is a follow-up to its 2004 study, which compared screwcaps, synthetic and natural corks as clo- sures for wines not intended for long aging.
