coffee roasting holds the promise of making a deeper connection to the brewing art for experienced operators. “Wine has about 250 distinct organic compounds.
Tere are 850 in coffee. It’s very complex,” Kennedy says. “An artist doesn’t become one overnight, but at some point you develop your skills and put emotion into your art. Te same with coffee.” Ultimately, the road to roasting can be a bit
bumpy and challenging to travel. But by planning ahead and test-driving equipment, the final destination—a shop that profits from coffee roasting—is well worth the ride. SCR
