Te world of specialty coffee retailing is no exception. With coffee shops on almost every corner (not an exaggeration in cities like Portland or Boston or Chicago), how does one shop distinguish itself from the others? Partnering with the right coffee roasters and understanding the kind of equipment you’ll need not only to survive but also to thrive in today’s competitive marketplace are key steps toward your ultimate success. We think this issue of Specialty Coffee Retailer will help you do both. In our cover story, contributing editor Alan Richman takes an in-depth look at four companies that share a passion for coffee and a dedication to the environment. Green Mountain Coffee Roasters, Dillanos Coffee Roasters, DeCoty Coffee Company and Te Evelyn Bay Coffee Company were generous enough to share their approach to the roasting business (along with some great pictures, too!). Start your “tour” on page 12. Setting yourself apart oſten means taking things to a different level. Many shops are doing just that by making the transition from simple coffee house to roaster-retailer. It’s not an easy undertaking. But as contributing editor Brenda Russell explains in “Get Equipped,” operators who thoroughly research coffee roasting equipment and recognize the challenges roasting presents can reap the benefits roasting their own beans brings. For tips on how to select the equipment that will transform your shop, turn to page 20. Creating outstanding espresso is another competitive plus—especially considering the popularity of the brew. Te average espresso drive-thru business, for example, sells 200 to 300 cups of espresso and coffee-based drinks per day, according to E-Imports, a Vancouver, Wash.-based provider of coffee and espresso business solutions to the specialty coffee industry. With the average price for an espresso-based drink at $2.45 vs. $1.38 for a cup of brewed coffee, it makes sense to consider ramping up your espresso operation. Contributing editor Maura Keller delves into the ins and outs of selecting espresso machines in “Espresso Evolution” that begins on page 27. Tis issue also brings our Annual Roasters Guide, a must-read and must- keep resource for anyone involved in specialty coffee retailing.
