All winery labs need to have storage space, with separate areas for different types of reagents (wet, dry, refrigerated, flammable, caustic) and supplies such as pipettes, graduated cylinders, hydrometers, scales, thermometers, etc. To make these items easy to access requires an array of shelves, cabinets and drawers. It's a good idea to have a refrigerator, freezer, sink and drying racks, and access to certain gases, depending on the types of analyses that will be run. A winery can never have enough glassware for tasting and blending, so make sure to provide room and budget for stemware. If you plan to do sensory trials on cork in the lab, you will need a couple hundred little jars with lids, and the space to lay these trials out. BASIC NEEDS The winery will need to decide what analyses it plans to run and what equipment it will require, versus outsourcing analyses that are expensive and/or time-consuming, or perhaps run infrequently. The choice of equipment will depend on the size of the winery, availability and cost of technical labor and equipment, and the frequency and extent of sampling. A basic winery lab should be able to perform analysis of Brix, pH and total acidity, as well as sulfur dioxide (SO2) and alcohol. For Brix measurements, a refractometer is recommended for grape juice, and there are inexpensive optical analog refractometers available. Hydrometers are required for Brix readings once the fermentation has begun, as alcohol will interfere with traditional refractometer readings. It is recommended to have several hydrometers of different scales as fermentations progress, and because they are fragile (and also inexpensive).
