EV uses a Biolan gluconic acid biosensor to evaluate fruit and juice quality. Gluconic acid is an indicator of laccase, an enzyme associated with rot from Botrytis that can lead to premature oxidation in juice and wine. Kollar said, "It's a good screening tool for the level of rot in grapes. For wineries that pay based on grape quality, this is something they could use at the point of grape receipt to quickly run samples in a few minutes."
