They know the roads better than anyone. Soon we arrived at Calfkiller Brewing Company in Sparta. Drawing its water to brew the beer from the Calfkiller River, this is the only craft brewery currently in the Upper Cumberland. Owned and operated by brothers Don and Dave Sergio, the tour of the facility included some frosty samples, my favorite being Grass Roots and the Blueberry Harvest Trail Ale (yes, it does have a hint of blueberry fl avor). After another two hours of stellar "Southern Backroads," we arrived in McMinnville for dinner (that would be lunch for you non -Tennesseans) at the Collins River BBQ & Café. A word of caution here: the helpings are large—if I'd eaten my entire brisket wrap I would've been dangerous on the road afterwards. Back on the highway, we headed towards Woodbury as I belched my way around sharp turns and long sweepers until we arrived at Short Mountain Road and the Short Mountain Distillery. Here we rev- eled in the stories of proprietor Billy Kaufman that included scandal, infi delity and murder involving the previous landowners. Even more enjoyable than the tall tales were the excellent examples of Kaufman's handiwork: small batch moonshine made with organic corn stone milled on site and using pure cane sugar. Along with such colorful shines as Prohibition Tea and Apple Pie, Short Mountain also produces some mighty fi ne bourbon and organic Tennessee Whiskey. Our Cumberland Carving ended that day at the Middle Tennessee Dragway, which will be a major venue for next year's Southern Backroads H.O.G. Rally. Rally Coordinator Gary Bagwell explained that one of the most anticipated events during the rally will be an AMA-sanctioned Pro Hill Climb held on a 550-foot section at the Dragway. So start bugging the boss now, securing your vaca- tion days well in advance for July 11–15, 2017. You will not be disap- pointed—carve it up. 4
